I am going to see Pelleas et Melisande at Glyndebourne on Thursday with some friends, and I have been tasked with providing the "main" for the interval picnic. This is Picknicking In Name Only: with cutlery, without crumbs.
That rules out Scotch Eggs then.
After much musing, I decided to go with an upmarket version of a some classic picnic recipes: ham, tomato salad, coleslaw, potato salad and an onion tart.
Ham was an obvious choice for a picnic: easy to cook in advance; actually at its best when tepid rather than hot. Tomato salad and coleslaw will provide a good hit of acid to cut through the richness of the ham. Personally, I don't think a picnic is worthy of the name unless a potato salad is involved, and as a general rule potatoes go well with piggy products. The onion tart might be considered superfluous, but they are yummy and will also go well with the ham.
